Volcán
Berry-forward. Sweet. Full of character.
Volcán is an expressive Mexican single origin led by red berry notes, layered with cacao, panela sweetness and roasted almond. A gentle fermented-fruit note adds complexity to the cup, reflecting its natural processing.
Grown at La Paja Farm in Michoacán, this coffee comes from a family whose coffee-growing tradition spans three generations. Caturra and Typica varieties grow beneath native shade trees in the region’s rich volcanic soils.
Small batch roasted in East Sussex to a medium profile, balancing its fruit-forward character with comforting chocolate and nutty notes.

The Story Behind Volcán
Our Volcán coffee comes from the Paricutín lot, named after Mexico’s youngest volcano, around 35 km from La Paja Farm.
Here, a family of around ten producers has kept coffee growing alive across three generations. Their 35-hectare farm brings together coffee, avocados, corn and other food crops, with three hectares dedicated to coffee.
The coffee grows in a garden-like landscape beneath pine, oak and tepehuaje trees, with orange and mandarin trees being planted among the coffee plants.
Growing with Care
The family is gradually adopting agroecological farming practices, using worm compost, other composts and natural fertilisers to improve the soil and reduce reliance on chemicals.
Their avocados are already certified organic, and they are working towards organic certification for their coffee.
Sourced through Ensambles, this lot is part of its first coffee purchase from Michoacán and the beginning of a growing commitment to producers in the region.
